Today was a good day. (FOOD!)



I woke up this morning and instantly knew that I must be on the other side of Round 2, because I was thinking about all of the things I wanted to COOK.  The first thing I did was get on Instacart and get a grocery delivery arranged.  The kids had been begging to make a cherry pie...I have no idea where they got it, considering they have never made, nor consumed, cherry pie before.  But we were on week 2 or more of this random request, and who am I to turn down kids begging to bake?

While we waited for groceries, I made banana pancakes and turkey (and veggie) bacon.  Then I got to work on roasted soy/orange chick peas, which have been on the docket since my lovely friend made some for me before the first infusion.  I ended up snacking on them all day.


Next up were croissants, and then the cherry pie.  These were cheater versions, courtesy of our friend Pillsbury.  James asked why the Ghostbuster ghost was on the side of our croissant can. :-D  Kids helped roll them up and we ended up with croissant tubes.

Then I got to work on black beans, from dried beans, in the instant pot.  And while those were going, Vivian and I made salsa.



Then I moved to roasted broccoli, and sauteed potatoes and onions as dinner sides, while Jay handled the protein.

I. am. exhausted.  I was on my feet nearly all day, and my hands are dried out from all the washing and rinsing.  I am not 100%; not even close.  I still have raging heart burn and a mild stomach ache.  I am feeling this in every inch of my body.  But I feel so accomplished and SO PLEASED that I had energy and desire to do something besides rest.  I cooked to my favorite background sounds: BET Soul, and then NFL games all day.

Football is back.  I am back.

(If the Steelers were not getting blown out on opening night as I type this, it would be a GREAT day.  Can't win them all.)
